It all started with the idea to create something different with the Champignon mushrooms. The following consumer trends were the base for the development: eat more healthy, eat less meat, eat more vegetables, use plant origin ingredients for vegetarian products which can be consumed instead of pure meat.
Added to these trends was the desire to create a product which has simply a really delicious flavour, taste and bite.
The target group for the products is the Flexitarian; in the mean time a very large group of consumers who choose eating vegetarian/ plant based alternatives for meat periodically.
This target group is open for vegetarian based meat alternatives, but find a lack flavour in most of the products currently offered in the market. A significant number of the current meat alternative products do not satisfy the target group’s flavour requirements.
For experiencing a good taste, juiciness of a product is a must. As the Champignon mushroom contain a high amount of water and have a large effect on the umami flavour, the goal was to create a productportfolio with Champignon mushrooms as a base.
The first line of products developed is a line of burgers, named the Champburger.
These burgers contain at least 80% of Champignon Mushrooms, are vegetarian, contain no soy, contain no e-numbers & no artificial ingredients, are low in salt content (<1gr/100g), have a low caloric content and a beneficial fibre amount.
A portion of one burgerpatty (80grams) contains a significant amount of the recommended daily allowance of 250 gram of vegetables.
The burgers are easily to be prepared in many different ways, like: the pan, oven, fry-ovens, deepfry, BBQ, grill(pan), and aircooker. The patties keep their shape during preparation, do not shrink, do not break easily and stay juicy.
Four flavours are developed: A natural flavour, a black pepper with extra black pepper crack, a smokey BBQ flavour and a more exotic flavour profile named Asian spiced. The flavour profiles differ only due to the use of different herbs & spices.
Different weight of burger patties (more heavy), a more homestyle look patty, Champpops (7 – 10g), Champballs (20 – 25g), Champnuggets, Champschnitzels and more exotic shapes will expand the range and deliver alternative application possibilities for the consumers: use in salads, use as appetizer, as tapas bite, as snack or small meal moment.
Next to different shapes & sizes products will be developed with Champignon mushrooms as a base in combination with all kind of vegetables and other non meat ingredients (cheese, nuts, beans, (sweet) potato, etc) to create a full range of Champilicious products.
All products can be sold frozen and under chilled conditions (with limited shelf life).
The target markets are (traditional and more fashionable) retail, foodservice, (school & care) catering, out of home and QSR. It is believed the product can be sold all over the world, with main focus on Europe, Austrialia, USA, Canada and south east Asia & Japan.
To develop and market this concept a company with the name Delichamp BV is founded.
Delichamp BV is a joint venture of Banken Champignons and In2Chains. Banken Champignons is a powerful family owned business in sourcing and delivering fresh mushrooms and fresh mushroom concepts to the retail and foodservice market in Europe.
In2Chains is a single man organisation specialised in to change ideas not only into a complete concepts, but also get the ideas in the market.
Champilicious is the trade name to be used as a brand and communication name for the whole concept. Champilicious products will be vegetarian or even vegan.
Delichamp is the company behind and the business partner. Delichamp BV can step into other joint ventures or develop other concepts in future which are less related to Champilicious. The basic what counts for Delichamp BV is that Mushrooms need to play a significant role.
