No specific slogan, so this does not need to be included but design could include "small batch coffee roaster" if the phrase helps aid in design feel.

Roasts specialty coffee with an emphasis on high quality roasting, sourcing, and giving back to sourcing communities. I sell through wholesale, direct sale, mail order, and thought private grocers. Much of the coffee is direct sourced, with fair wages given to farmers, and in addition as a company invests 10% of our profit back into the sourcing regions. Will be selling to specialty coffee drinkers (Most notably 25-39 year olds with disposable income). The geographic area will be the Maryland and Washington DC area. Specifically Annapolis, Baltimore, Washington DC, and the Eastern Shore of Maryland.

"Open Seas" is the company name that is branded but I want to have "coffee roaster" somewhere on the logo to help people identify the product.
I like the concept of incorporating some sort of sea monster/creature or nautical theme but not too pirate ish.
Also, I am open to other color ideas but am specifically drawn to a color scheme of sea foam green in combination with grayscale. An example of the sort of color I mean is below .... But I am completely open to other shades, ideas, and colors as well.
Attached is a file of a brand style I like from Kraken Rum. This does not need to be the style of my logo but may be helpful in understanding some of my tastes.

Colors would be similar to my notes on logo design. Open to input but am drawn towards sea foam green and grayscale.

I would like to discuss this more in-depth with the designer before they start on it but I do like photographs being included. I will need a landing page that opens when you click on the logo, I would like this to have a space for pictures, links to the other pages, our address and contact info on the bottom, and an updates section on the side similar to the "counter culture" site noted above. I also want a "Coffee" page where people can purchase coffee and hear descriptions of the different offerings, this will need a drop down for every item where people can select the quantity, etc for each item. Then it will need to go into a "cart" to proceed to check out. The checkout section will need to be able to use "paypal" and/or another purchasing company to process the order on the site. I will also need an "About" page with contact info and a description of us as a business. On this page I would like a unique graphic that will give a pictorial illustration connecting the purchaser to the farmer. I also would like a "Store" page where there will be different coffee making supplies with pictures and descriptions. I will also need a "how to" section where I can post instructions for coffee preparation methods and recommendations...I would like this to be both via pictures and text and through video.
